Pioneer Woman Cooking - Update 5

See the update in BLUE

  1. PW's Potato Skins - time consuming but easy....just not sure what to do with the extra potato I scooped out. We used turkey bacon instead of regular bacon but I think it was probably just (almost) as good.
  2. Hot Artichoke Dip
  3. Cinnamon Rolls (she's famous for these - has even been on many morning shows making them)
  4. Breakfast Burritos
  5. Migas
  6. French Breakfast Puffs
  7. Maple Pecan Scones
  8. MarlboroMan's Favorite Sandwich
  9. Spicy Pulled Pork - This will become a go-to meal for us. What an awesome thing to do with pork but we substituted beef since we have a half a beef in the deep freeze. Dad made it with pork and I have to say it was yummy with beef chuck roast. We made a soft taco bar and served it with tortillas, black beans, sour cream, guacamole, tomato, lettuce and salsa. Sorry no picture.
  10. Macaroni & Cheese  - fairly easy to make and VERY cheesy.We did go a little light on the seasoning since it was really for Greyson. He LOVED it of course.

  12. Cowboy Calzone
  13. Perfect Pot Roast - Was an easy recipe. We cooked ours in a crock-pot instead of a dutch oven and the only other thing I would do different would be to trim more fat off my Chuck Roast before cooking. Michael and Greyson both LOVED this.
  14. Chicken Pot Pie (Perfect Pie Crust) - First off, her crust is the flakiest crust I have ever seen. I left out one tablespoon of water and could have probably left out 2..it was a bit sticky. I followed the pot pie recipe to the T and it was unbelievable. We will make this one for sure again but maybe not too soon with the cup of whipping cream and 4 tablespoons of butter not to mention the cup and a half of vegetable shortening in the crust.
  15. Meatloaf - Followed the recipe to the T but decided to add onions. I loved the moistness (from bread soaked in milk and 4 eggs) and the bacon on top. Think next time I will blend the recipe we normally use and hers by adding mushrooms, red pepper, and more onions. Michael was not a huge fan but I think with the blending of the two recipes he will be happier.
  16. Cheese Grits - We had these with steaks, cauliflower, and asparagus. Will say...there was a bit too much garlic in it for everyone and will probably leave out one clove next time. Might also add green onions and some bacon as well. FYI - we made a half a batch and it could have fed an army.

  21. Flat Apple Pie - So mine can't really be considered flat since after I rolled it out I put them in my creme brulee dishes. I will say again that this is the flakiest crust ever - which is not always a great thing. Since it was a rustic pie it didn't matter if it fell apart. Of course it was made even better with a scoop of ice cream (and heated). Not sure if I will ever make this again since Michael wasn't a huge fan.   24. Sour Cream Noodle Bake (from website) - This is the perfect mix of sour cream, cottage cheese, cheddar cheese and noodle of course. Easy recipe for using ground beef. It will be a good recipe for Greyson. Michael's only complaint....not enough meat.Think we will double the amount of ground beef next time.

As suggested by Ree (Pioneer Woman) I did add 1 teaspoon vanilla, 1 teaspoon cinnamon and 1/4 cup sugar as well as 1 cup Hershey's cinnamon chips. I decided to try mini sized scones this time and I think I will stick with that size from now on. Finally I added her topping of cinnamon and sugar. I mixed it with a little egg yolk and milk, spread it over the uncooked dough, and it cooked up to make the perfect crispy, sweet crust on top. 
  26. Spaghetti & Meatballs - Well....the Meatballs but not her sauce :) - did substitute the ground pork for Italian Sausage and grilled the meatballs in our new meatball grill basket from William-Sonoma. The recipe has the perfect amount of Parmesan, breadcrumbs, herbs and more. A definite do-again. The meatballs were fantastic and I can't wait to make a meatball sandwich with tons of sauce and mozzarella cheese.

Why Wednesday - Sick (part deux)

WHY was I sick {again}?????

No running today since I went to bed last night with a fever of 101 and spent most of yesterday feelings as if a Mac truck ran over me (head to toe) and I couldn't' decide if I needed a sweatshirt to accompany my T-Shirt, sweatpants and socks even though it was 89 degrees outside. What is weird is that there was nothing else wrong with me...no sore throat, no throwing up or the other end (ewwww)....just aches and fever. Too weird.


Never have I ever been sick so much in my life than I have in the past year. I swear this kid has brought everything home from the sitter to me that could possibly be passed on. The saddest part is that when I get it he has probably gotten it too. I feel so bad for him when he is sick and he isn't much fun to be around. You know he hates to have his nose wiped and he doesn't know how to throw-up in the toilet yet. Wondering when he will learn that??? Maybe I should shoot for walking first. :) The only good thing about a sick baby is that they sit still long enough to be cuddled and will fall asleep in your arms. 

Good thing is that we are all on the mend and looking forward to a fun 4th of July weekend with the family at the lake (which includes running with the sister). Besides this minor set back I should be able to get in my 4 runs this week and hopefully log 24 miles. Still did crunches and push ups but not as many nights as I should have. Will be better next week!!!!

Another Pioneer Woman Cooks update

Remember, I am trying to cook all of these great looking, sounding recipes from The Pioneer Woman, one of my favorite bloggers. Not sure if you have noticed but the list is getting longer. It seems that each week she adds more recipes to her blog that have to get added to my list. This week......Taco Pizza - it made me remember the old days of working at Pizza Hut when they used to have the good Taco Pizza. it's just not the same now so I was thinking I might as well give it a shot at home. Here is the running list; new tries are always in blue.

  3. Cinnamon Rolls (she's famous for these - has even been on many morning shows making them)
  4. Breakfast Burritos
  5. Migas
  6. French Breakfast Puffs
  7. Maple Pecan Scones
  8. MarlboroMan's Favorite Sandwich
  9. Spicy Pulled Pork - This will become a go-to meal for us. What an awesome thing to do with pork but we substituted beef since we have a half a beef in the deep freeze. Dad made it with pork and I have to say it was yummy with beef chuck roast. We made a soft taco bar and served it with tortillas, black beans, sour cream, guacamole, tomato, lettuce and salsa. Sorry no picture.
  10. Macaroni & Cheese  - fairly easy to make and VERY cheesy.We did go a little light on the seasoning since it was really for Greyson. He LOVED it of course.

  13. Perfect Pot Roast - Was an easy recipe. We cooked ours in a crock-pot instead of a dutch oven and the only other thing I would do different would be to trim more fat off my Chuck Roast before cooking. Michael and Greyson both LOVED this.
  14. Chicken Pot Pie (Perfect Pie Crust) - First off, her crust is the flakiest crust I have ever seen. I left out one tablespoon of water and could have probably left out 2..it was a bit sticky. I followed the pot pie recipe to the T and it was unbelievable. We will make this one for sure again but maybe not too soon with the cup of whipping cream and 4 tablespoons of butter not to mention the cup and a half of vegetable shortening in the crust.
  15. Meatloaf - Followed the recipe to the T but decided to add onions. I loved the moistness (from bread soaked in milk and 4 eggs) and the bacon on top. Think next time I will blend the recipe we normally use and hers by adding mushrooms, red pepper, and more onions. Michael was not a huge fan but I think with the blending of the two recipes he will be happier.
  16. Cheese Grits - We had these with steaks, cauliflower, and asparagus. Will say...there was a bit too much garlic in it for everyone and will probably leave out one clove next time. Might also add green onions and some bacon as well. FYI - we made a half a batch and it could have fed an army.
  17. Comfort Meatballs
  18. Sour Cream Noodle Bake (from website) - This is the perfect mix of sour cream, cottage cheese, cheddar cheese and noodle of course. Easy recipe for using ground beef. It will be a good recipe for Greyson. Michael's only complaint....not enough meat.Think we will double the amount of ground beef next time.

162 - 6/11: Wake surfing - sure wish we had a bigger wake.

163 - 6/12: New Boat Storage - this is going to make our life easier. No more putting the tower down.

164 - 6/13: Mole Hunter - hung out here for 2 hours with no luck. Yes that is the iPad in his lap.

165 - 6/14: This is the best rest area on Hwy 44 just west of Lebanon. Very green.

166 - 6/15: Waiting for frozen custard at Andy's.

167 - 6/16: One of the bridges on my favorite trail run in Columbia.

168 - 6/17: Homemade Delisiousness - made the caramel by boiling a can of Sweetened Condensed Milk for 3 hours and the hot fudge is made from this recipe. It's a keeper.

Catching Up

It has been a while since I last posted and I wish that I had a good excuse but NOPE....except life has gotten in the way. The running has continued even though there is no Marathon on the calendar for the fall. Don and I plan to do The Berryman Adventure Race in late September but beyond that I really don't know.

Mileage has been somewhere around 24-30 miles per week with putting in a longer run each Sat (8-10 miles). The heat has been brutal on a couple of mornings ~ including last Saturday when I thought I was going to pass out in the middle of the road at any minute only to be run over by an early morning garage-saler. Alas, I made it back to my house with the help of my pregnant friend, Chanti, who I must say is so awesome....still running at 36 weeks (even though she likes to point out she has slowed a bit). She was gracious enough to put in a few miles on her feet and then on her bike. Was nice catching up and having a CRC member at my side {they seem to be dropping like flies}.

Other random thoughts about running:
  • I got some new shoes - Asics Nimbus 12 in wh/yellow/orange (next ones will be wh/yellow/pink-bring on the 13's)
  • Ran at the lake with my friend Jen who I have only gotten to run with one other time since having G. Was good catching up.
  • CRC running friend, Debbie, is still on the injured list and is only walking (in Europe for the last 2 weeks)
  • Have seen lots of turtles, rabbits, squirrels (including a black one), 4 deer, and 1000's of cicadas on my recent runs.
  • Ran a new section of the trail in Columbia when I was there for work last week. Think I would like it more with a running partner.
  • Sister is coming next weekend for the 4th and says we are running 10 on Saturday before heading to the lake. She is under the impression that we are going with them to run the Denver Marathon at the end of October.
  • Michael lost his job due to the Joplin tornado {a month ago} and is patiently waiting for a couple of leads to pan out. This is why we are not going to Denver for the Marathon and I will most likely do a local (OK) one in November.

Pioneer Woman Cooking - Update 3

Another update - I am on my mission to make some of the Pioneer Woman's recipes from her cookbook (that Michael requested) and some from her website. Here is the running list with the new try in blue:

141 - 5/21: 4th Place Finishers - Ozark Greenway's Adventure Race 2 person, coed division

142 - 5/22: Tornado Clouds - when you see these kinds of clouds you know it's not good. This is what the sky looked like over our area before the huge tornado hit Joplin. Once the storm hit it sounded like constant thunder. Someone told us that was the tornado but I still don't know.

143 - 5/23: Out of Town Again - the Hampton Inn in Liberty, MO is such a cool hotel. This was outside our room. Every room has a different picture.

144 - 5/24: Simple Travel - this Amish family (wish I could have gotten a picture of the entire family of 5) was waiting for the bus at the truck stop.

145 - 5/25: Found - Aunt Tralaine had been missing for a week. We found her in the bottom of Greyson's toy bag.

146 - 5/26: Almost Forgot - Sometimes the day slips away and you remember almost a little too late that you haven't taken your photo for Project 365.

147 - 5/27: Honeysuckle - I love running down this road in the early mornings...it is lined with the sweet smell of honeysuckle.

Why Wednesday - Recovery

WHY is this recovery taking so long?

It's been a week and a half since the Adventure Race (update coming soon I promise) and I have still not fully recovered. This year was the easiest course wise that has ever been since I started racing almost 10 years ago. The fact that I wasn't really ready is now showing in my fatigued legs. Yet another reminder that I should have trained harder and longer. 

The first run 3 days after wasn't so bad. I had my cousin in town and being the social runner that I am, I talked the entire time giving him the run down of the race. Two days later I went out for a 6 miler on my own and time seemed to stand still. Saturday turned into a 2.5 mile run with the stroller and then a 2.5 mile walk with the two sisters (one is not a runner). Then two days of no running {due to laziness} and then two days in a row with both days feeling like legs were just not back up to par.

Must get out of this slump soon! Next race isn't until the end of September but i want to feel better than this.

June 2011 Follow-Up Appointment

We met with the plastic surgeon and radiologist at Children's Mercy today for a follow-up appointment for Greyson. They are very pleased with his progress and how the compression garment is working. Our main goal for the appointment was to talk about when his next surgery would be and Dr. Jiang said he felt like December would be good. His plan is to keep working on contouring the part of "Buddy" they left and possibly see if the can fix the spot in Greyson's middle finger.

Dr. Rivard suggested we go ahead and take Greyson down for ultrasound so that we wouldn't need to come back for that in the near future. They were able to fit him in and found that there were no large cysts. This means Greyson won't need any additional sclerosis (which was what we were hoping for).
While we were there we stopped by the OT/PT clinic and picked up another Under Armour. This one is fitting much better than the green tie-dyed one. The fingers on the green one are way too long. They are going to get that fixed and hopefully get that to us soon.

Greyson is doing so great. He has mastered crawling and found a new independence and perspective. He now seems to know what he wants and gets frustrated quickly when he realizes he can't get it. He really wants to walk but it is still a bit off. He hasn't quite figured out balancing yet.

I believe I have found a blog option to change Greyson's stuff over to and will only be posting "medical" updates here after I get that set up. There should be a way that you can subscribe by email (much like CarePages) if you want. I will make a post to give you all the details soon.
